So my #pantrypairing for tonight! We had some tortilla Crushed tilapia in the freezer as well as a big bag of quinoa that I seasoned with dried thyme. Michael picked up beets at the store this week which had beautiful greens on the top, so those got cooked dow. With olive oil s&p and a bit of white wine vinegar. A little sliced apple for it's brightness. This was paired with a 2018 Cadaretta SBS. In my last post I called this a Sav Blanc, but it's more than that. In a Bordeaux (specifically Entre deux Mers) style this wine is 66% Sauvignon Blanc and 34% Semillon (that grape we came to love in Australia's Hunter Valley). #youcansipwithus

Tonight we will open this Sauvignon Blanc from Cadaretta. We had an amazing visit to their glasshouse on their vineyard back in October of 2018 with the Wine Media Conference. (Scroll through to see the photos) More recently we visited their tasting room when we were in Walla Walla in July. Sadly this is the last bottle of their wine that we will get to enjoy.
Back in February they decided to take their family business in a new direction and closed Cadaretta.
We will give a toast to Kris Middleton, as well as one to Greta who took care of us both in the tasting room and at the dinner. (More on the dinner pairing later) #Washingtonwines

This afternoon we are doing the #flatteningthecurve thing with this beauty.
@tablascreek. Circa 2018 If you know me, you know that this was my gateway drug to Tablas Creek addiction. I love their Vermentino. This 2018 is sold out. They only made 1140 cases. They never make enough IMHO. These grapes are certified organic and biodynamic! Remember we are doing the #travelinabottle thing! Well it occurred to me we can go a bit "whovian" on this because with wine, we are not just traveling to a place, we are travelling through time, revisiting a vintage! From their site (cause they are genius with this stuff)
"The 2018 vintage saw an almost ideal balance of vine health and stress, as is often the case with the first dry year after a very wet one. Although rainfall was just 70% of normal, the rains came late, delaying the onset of bud-break and the beginning of the growing season. The cool weather continued most of the year, punctuated by a six-week heat wave in July and early August. But temperatures moderated before picking began, and harvest proceeded under slightly cooler than normal conditions, allowing us to pick without stress and producing fruit (and wines) with intense flavors and good balancing acidity.
The Vermentino grapes were whole cluster pressed, and fermented using native yeasts in stainless steel to emphasize the minerality of the grapes. The wine was bottled in February 2019." So pick a winery, pick a vintage and enjoy some time travel with me!

On Crushed Grape Chronicles today: The Valley Grove Vineyard and the future of Armstrong Family Winery. These photos are of the barn on the property built in 1895, the beautiful guest house on the property, friendly wildlife..(got to love cats!) And the vineyard view! We met Tim at the Wine Bloggers Conference (now known as the Wine Media Conference) in Walla Walla in 2018. We k we when we were back in the area we wanted to have a chance to speak further with him. So on our trip in July 2019 we scheduled a visit. While you are at home, you can read up on this Winery and their beautiful vineyard and plan a getaway when we can all get out and travel again! #travelinabottle

Yesterday there was no wine. Well...okay, there was a bit of leftover chardonnay from the comparative tasting..but... Michael made flatbread inspired by a recipe share on facebook by a friend. I decided it would be good with honey...and it was.

So some flashbacks to our visit to Syncline. This is a beautiful place with gorgeous thoughtful (enviromentally) landscaping. Then you go to the vineyard...the view of the Columbia Gorge is amazing.
James Mantone the winemaker starts off a little stoic but he warms and you can really see his passion. We appreciate him taking time with us. There is a bit of our time with him in #thescenicroute videos, but you can expect to see more. @synclinewinery

So what did we do with our #pantrypairing for this

So what did we do with our #pantrypairing for this #travelinabottle adventure? With our 2018 Grüner Veltliner from Syncline they suggest to pair with fresh shellfish, artichoke, sushi, and asparagus. Well...(this is a #pantrypairing) Tasting this the first thing I got was lime pith, followed by a rounded lemon (think meyer) and chalk. As it opened the lemon was sweeter on my nose and I started to notice a little baking spice in the back. As it opened further I got stone fruit, like just underipe nectarine. So... We dug in the freezer, the fridge and the pantry. We pan fried some catfish in panko with sage. We did a spring green and spinach salad with julienned golden apple and nectarine with some poppy seed dressing. We had some leftover cauliflower asparagus and mushroom risotto. We added a simple buttered herbed angel hair pasta on the side. Everything was great with this wine. Surprisingly the least exciting pairing was the artichoke risotto. We did not add lemon juice to the fish at the end ..we didn't need to, the wine brought that acid! It was great with the greens and fruit. Okay now about this wine. This was just the 3rd harvest of this Grüner from Bloxom Vineyard. James did 1/3 with skin contact and put that in a concrete egg. The rest went direct to the press and got put in acacia puncheons and some barrels. The whole kit and caboodle finished in stainless before bottling. The made 12 barrels.
This wine is delicious and I bet if they continue pulling fruit here it will just get better vintage by vintage. #youcansipwithus

Today day 6? Of Travel in a glass we find a little zen with tis 2018 Grüner Veltliner from Syncline. This is made from grapes from Bloxom Vineyard in the Columbia Valley ( they are within the Rattlesnake Hills AVA in Washington's Yakima Valley) This winery is located in the Columbia Gorge AVA. It's a stunning site...(watch for more posts) #travelinabottle
